Besan Ladoo Recipe: How to Make Perfect Danedar Besan ke Laddu

CHAKKI PEESING

Every Diwali, someone in the family stands at the stove stirring besan in ghee for what feels like forever. That patience is the whole secret of a good besan ladoo. Roast too little and the ladoo tastes raw; rush the sugar and it turns flat and sticky. Get both right and you get the grainy, melt-in-the-mouth danedar ladoo that sweet shops are famous for.

Quick answer: Roast 250 g coarse besan in 150 g ghee on low heat for 25–30 minutes, stirring constantly, until it turns golden brown and smells nutty. Let it cool until just warm, then mix in 150 g powdered sugar or bura, cardamom and chopped nuts. Shape into ladoos while the mixture is still slightly warm. This makes about 18 ladoos.

Ingredients for Besan Ladoo

  • 250 g Besan (Dardara), the coarse grind, for a grainy texture
  • 150 g (about ¾ cup) A2 Desi Cow Ghee, plus 1–2 tbsp extra if needed
  • 150 g bura or powdered sugar
  • ½ tsp green cardamom powder
  • 2 tbsp chopped almonds or cashews
  • 1 tbsp milk (optional, for an extra-danedar texture)

Only have fine besan? Use 200 g Besan (Baarik) with 2 tbsp fine sooji. The sooji adds the grainy bite.

How to Make Besan Ladoo: Step by Step

  1. Melt the ghee. Warm the ghee in a heavy-bottomed kadhai on low heat. A thick pan stops the besan from scorching.
  2. Add the besan. Tip in the besan and stir. At first it looks like a thick, lumpy paste. That is normal.
  3. Roast low and slow. Keep the heat low and stir continuously, scraping the bottom. After about 10 minutes the mixture loosens and becomes runny as the besan releases the ghee.
  4. Watch for the three signs. After 25–30 minutes the besan turns golden brown (like the colour of peanut butter), smells strongly nutty, and ghee starts to separate at the edges. This is when it is done.
  5. Optional milk trick. Sprinkle 1 tbsp milk over the hot besan. It will bubble and froth. Keep stirring for 1–2 minutes until it settles. This gives the classic halwai-style grainy texture.
  6. Cool until warm. Switch off the heat, transfer to a plate and let it cool for 15–20 minutes. It should feel warm, not hot, on your palm.
  7. Mix in sugar and flavour. Add the bura or powdered sugar, cardamom and nuts. Mix well with your hands.
  8. Shape the ladoos. Take about 2 tbsp of mixture and press it firmly into a round between your palms. If it doesn't hold, add 1 tbsp of warm melted ghee and mix again.

Why does roasting take so long? Raw besan has a sharp, beany taste. Slow roasting in ghee browns the flour and develops a toasty, nutty flavour, the same kind of browning that gives toast its taste. Turn up the heat to save time and the outside burns before the inside cooks.

Besan Ladoo Problems and Fixes

Problem Likely cause Fix
Tastes raw or slightly bitter Besan under-roasted Return the mixture (before adding sugar) to low heat and roast 5–10 minutes more
Ladoos won't bind Too little ghee or mixture too cool Add 1–2 tbsp warm melted ghee, or warm the mixture slightly
Ladoos flatten or turn sticky Sugar added while besan was too hot, so it melted Chill the mixture for 10 minutes, then reshape
Burnt taste or dark specks Heat too high or thin pan Use a heavy kadhai and keep the flame low throughout
Not grainy enough Fine besan used Use coarse besan, or add fine sooji, or try the milk trick

Baarik or Dardara Besan for Ladoo?

Dardara (coarse) Baarik (fine)
Texture of ladoo Grainy, danedar, melts slowly Smooth, soft, almost fudge-like
Roasting Forgiving; less likely to clump Clumps more; stir harder at the start
Best for Halwai-style besan ladoo, magaz Smooth ladoo, besan barfi, chilla, kadhi

Both are stone-ground from 100% chana dal. For more on the two grinds, see our besan chilla recipe.

How Long Do Besan Ladoos Last?

Stored in an airtight container at room temperature, besan ladoos stay good for about two weeks. In hot or humid weather, keep them in the fridge and bring them to room temperature before serving so the ghee softens. A stale or rancid smell means they are past their best.

Gifting tip: Let the ladoos set for 2–3 hours before packing them in a box. Freshly shaped ladoos are soft and can lose their shape in transit.

Besan Ladoo Calories

We worked this out from the recipe above using USDA values for chickpea flour, ghee (butter oil), sugar and almonds. The whole batch comes to roughly 2,950 kcal, so one 30 g ladoo has about 165 kcal and around 3 g of protein. Treat this as an estimate; more ghee, sugar or nuts will change it.

Variations to Try

  • Jaggery besan ladoo: Replace sugar with powdered jaggery. The ladoos will be darker and slightly softer.
  • Dry fruit besan ladoo: Add 2 tbsp each of chopped pistachios, almonds and raisins.
  • Magaz-style: Add 2 tbsp roasted melon seeds (magaz) along with the nuts.
  • Coconut besan ladoo: Roast 3 tbsp desiccated coconut with the besan in the last 5 minutes.

Frequently Asked Questions

How long should besan be roasted for ladoo?

About 25–30 minutes on low heat for 250 g, until it turns golden brown, smells nutty and the ghee starts to separate.

Why are my besan ladoos not binding?

There is usually too little ghee or the mixture has cooled too much. Add 1–2 tbsp warm ghee and shape while the mixture is still slightly warm.

When should I add sugar to besan ladoo?

Only after the roasted besan has cooled to just warm. If it is hot, the sugar melts and the ladoos turn flat and sticky.

Which besan is best for ladoo?

Coarse (dardara) besan gives the classic grainy texture. Fine besan works too but gives a smoother ladoo; add a little sooji for bite.

How many calories are in one besan ladoo?

About 165 kcal for a 30 g ladoo made with this recipe.

Can I make besan ladoo without sugar?

Yes. Use powdered jaggery or finely chopped dates. Jaggery gives a darker, softer ladoo; dates make it chewier and shorten the shelf life to about a week in the fridge.
