# **Yellow Mustard Cold Pressed Oil**

Pure Yellow Mustard Oil, Traditionally  Cold Pressed – Single Extraction Only

## **Ingredients and source and popularity of the grain**

Our Yellow Mustard Cold Pressed Oil is made using carefully selected native yellow mustard seeds traditionally consumed across Indian households. We extract our oil in a single press and do not use oil cake repeatedly for more extraction like many cheaper alternatives in the market. Through intermediaries, we source the mustard from Bharatpur, Alwar, Sawai Madhapur, Sri Ganganagar in Rajasthan, They are the gold standards for Mustard cultivation.

These seeds are widely valued for their sharp aroma, warming nature, and natural cooking stability. Cold pressing helps retain the oil’s natural antioxidants, essential fatty acids, and pungent flavor, unlike refined oils that undergo heavy processing and chemical treatment, which strip away nutrition and character.

## **Taste,Color, Texture, flavour and usage instructions**

This oil has a mild pungent aroma with an,authentic mustard flavour. It has light yellow colour and a smooth texture and performs well at regular Indian cooking temperatures. Best used for traditional Indian cooking, heat the oil until it reaches its smoking point to mellow the sharpness before adding ingredients.

Store in a cool, dry place away from direct sunlight. Close the cap tightly after use to maintain freshness.

In general, all cold pressed oils in 1 litre measurement will weight less than 1 Kg in weight, it varies from seed to seed. We have indicated the weights in website but due to weather conditions and extraction method there can be change in the weight for a particular volume of the oil.

## **People wise Suitability**

Suitable for everyday household cooking for all age groups. Ideal for people who prefer traditional oils with strong flavour profiles and minimal processing. Not positioned for specific medical or therapeutic dietary requirements. Consumption should be based on individual preference and dietary understanding.

## **Allergen**

Processed in a facility that handles mustard seeds. The facility also has a milling unit that processes products containing gluten, soya, legumes, and nuts. While there is physical segregation between units, they are not air-locked.

## **Disclaimer**

Natural variations in colour, aroma, and pungency may occur due to seasonal changes in mustard seeds. This is a natural characteristic of cold pressed oils.
In some cases, a thin layer of oilseed particles may settle at the bottom of the bottle due to natural sedimentation. This is completely edible and indicates minimal processing and purity. Such settling may occur when sedimentation in storage tanks is not 100% complete due to weather conditions.

## **Ideal Uses**

Ideal for Indian cooking such as sabzis, dals, curries, tadkas, pickles, marinades, and regional preparations. Suitable for both daily cooking and traditional recipes. Do not use same used oil multiple times as it develops toxic substances after use.

## **Cooking Suitability & Smoke Point Guidance**

Cold pressed mustard oil has a moderately high smoke point (approx. 230–250°C when properly heated), making it suitable for multiple cooking methods when used correctly.

### ✅ **Deep Frying**

Yes, it can be used for deep frying occasionally.
For best results, heat the oil until it reaches its smoking point and then allow it to cool slightly before adding food. This traditional practice mellows the pungency and improves frying stability.

### ✅ **Shallow Frying & Sautéing**

Ideal for shallow frying, tadkas, sautéing vegetables, and everyday Indian cooking. It performs well under medium to high heat and adds characteristic flavour to food.

### ✅ **Tadka / Tempering**

Excellent for tadkas in dals, curries, and sabzis. The oil releases its aroma quickly and carries spices well.

### ⚠️ **Raw Use / Dressing**

Not recommended for raw consumption or salad dressings due to its strong pungency and natural sharpness. Mustard oil is best used after heating.

## **Cold Pressed Oil, Wood Pressed Oil vs Refined Oil – What’s the Real Difference?**

### **1\. Extraction Method**

**Cold Pressed Oils (Chakki Peesing)**
Cold pressed oils are extracted at controlled low temperatures using mechanical pressure only. This process avoids excessive heat and chemical intervention, helping preserve the oil’s natural fatty acid structure, antioxidants, and flavor. At Chakki Peesing, we follow a single-press method—the oil is extracted once from fresh seeds, and the remaining oil cake is not reused for further extraction.

**Wood pressed Oils (other competition)**

While Wood-pressed is also a method of cold pressing, but we see some advantage of our SS based machines over wood pressed. Wood-pressed oils can suffer from poor temperature control, hygiene challenges, inconsistent quality, and higher oxidation risk due to porous wooden surfaces and manual operation. Well-controlled metallic cold-press machines offer better temperature regulation, food safety, consistency, and nutritional stability, especially for single-press, small-batch oils.

**Refined Oils**
Refined oils are produced using high heat, chemical solvents, bleaching agents, and deodorization processes to maximize yield and uniformity. These steps significantly alter the oil’s natural composition and strip away many naturally occurring nutrients.

### **2\. Fat Profile: MUFA & PUFA Explained**

Cold pressed mustard oil naturally contains a balanced proportion of:

- **MUFA (Monounsaturated Fatty Acids):**
Known to help maintain healthy cholesterol levels by supporting higher HDL (good cholesterol) and reducing LDL (bad cholesterol) when used as part of a balanced diet.
- **PUFA (Polyunsaturated Fatty Acids):**
Includes essential fatty acids that the body cannot produce on its own. These fats play a role in heart health, cell function, and metabolic balance.

Because cold pressing avoids extreme heat and chemicals, the natural MUFA–PUFA balance remains largely intact, unlike refined oils where the fat structure can be altered during processing.

### **3\. Cholesterol & Bad Fats – How Cold Pressed Oils Help**

Cold pressed oils contain no added trans fats and do not undergo hydrogenation or chemical modification. Their natural fat composition, when used in moderation:

- Supports better lipid balance
- Helps reduce intake of processed and damaged fats
- Encourages replacement of refined, highly processed oils with minimally processed alternatives

Refined oils, due to repeated heating and chemical treatment, may contain oxidized fats that contribute to poor fat quality in the diet.

Note: No edible oil reduces cholesterol on its own. Benefits are best achieved when cold pressed oils are used as part of an overall balanced, home-cooked diet.

### **4\. Single Press vs Multiple Extraction**

At Chakki Peesing, we use only the first, single press of mustard seeds.

- Oil is extracted once from fresh seeds
- The remaining oil cake is not reprocessed to extract residual oil
- This ensures better flavor, aroma, nutritional integrity, and purity

In contrast, multiple-extraction practices (common in large-scale processing) priorities yield over quality and often require additional heat or processing.
